I read the following article through Flipboard and it's fascinating to read about “black sugar”, the good old unrefined sugarcane juice making a comeback :). Am thrilled actually because now our desi boys and girls will switch to jaggery aka black sugar. All that matters is, they eat healthy.
Is black sugar and jaggery same?
In India, you'll find a cousin of black sugar that goes by the name of jaggery or gur. Jaggery is produced similarly to Okinawa black sugar but has a deep brown colour. Differences between Jaggery and Brown SugarJaggery also commonly known as 'Gur' in Hindi is made differently when compared to brown sugar. It is unrefined sugar made without spinning it in the centrifuge. Whereas, brown sugar is refined sugar and centrifuging is a part of the refinement process.
